Rendang Curry Paste

Found on the Worlds '50 Most Delicious Foods' list, Rendang is one of the most popular dishes to come out of Indonesia. My version includes fresh chilli, coriander, lemon, tamarind and plenty of toasted coconut which gives this paste a depth of flavour that has customers coming back for more. Some say it is "addictive". I think it is a good addiction to have.

Sri Lankan Hot and Sour Curry Paste

The balance of chilli and tamarind evokes the flavours of Sri-Lanka. This versatile paste can be used with any meat, fish or vegetables. Simply marinate your choice of meat with the paste for 1 hour or more, melt some coconut oil in a saucepan, add the meat and stir until sealed. Add some stock or water and simmer until meat is tender. The addition of coconut milk will tone down the heat if required.

Sri Lankan White Curry Paste

This Sri-Lankan “white” curry paste is the base for the famous ‘kiri malu’, which literally translated means ‘milk fish’ curry. It contains no chilli and although traditionally used with fsh it can also be used with any other white meat or vegetables. I have taken the liberty of adding fresh coriander to it which, I believe, adds another layer of flavour to one of my favourite dishes. Be generous with the coconut cream for a great taste of Sri- Lanka.

Thai Red Curry Paste

Thai red curry paste is probably the most popular base for Thai curries, stir frys and soups. Red curry paste is a spicy chili paste made with fresh aromatic ginger, lemongrass and lemon, adding a pungent and vivid flavor and aroma. Used as a base for the famous 'Red Duck Curry', this versatile pase can also be used with any other meat or vegetables. Like all of the pastes in my range, the packaging is done a very short time after production. This locks in all of the flavour to give you that 'Just Ground' experience.

Thai Green Curry Paste

Thai Green Curry is probably the most famous of all Thai curries. It is the hottest of the Thai coconut based curries. This paste is based on a traditional recipe and does not contain any sweeteners. Green curry is typically eaten with rice, or with round rice noodles. Made with the freshest ingredients some sourced from our garden, this green curry paste when combined with coconut milk will have your taste buds tingling.

Jungle Curry Paste

Thai Jungle Curry is a ‘broth’ style curry that does not require the addition of coconut milk as no coconuts grow in the mountainous region that it hails from. Packed full of ginger, peppercorns and coriander it is paired traditionally with pork, but also makes a great chicken, seafood or vegetable/Tofu curry. Bursting with flavour this paste combines black and green peppercorns with a fresh hit of ginger and red chilli for those who like their curries HOT!

Korma Curry Paste

This paste is a 'mash-up' of a few recipes that I have tried over the years. The first thing that you will notice is that it does not look like the 'traditional' Indian recipe. This is the result of grinding the fresh chillies and coriander and mixing them into the paste to retain all of the flavour. Another customer favourite from my restaurant years, this paste is loaded with almonds and is the mildest of my Indian curries.

Madras Curry Paste

This South Indian classic was made popular in the curry houses of Britain and contains a blend of spices that is uniquely Indian. My version, whilst paying homage to the original does not contain nearly as much as I recall. As a traditional Hindu dish, it is perfect for all vegetarian meals.

Massaman Curry Paste

Clove and black pepper dominate this classic Thai Massaman paste making it perfect for beef or lamb curries. Can also be used as a great marinade or rub for your barbeque steaks. Massaman curry is most commonly made with beef or lamb but can also be used to make duck and tofu curries. This dish is served with rice and pickled ginger or 'Achat' a dish made with cucumber and chilli macerated with vinegar sugar and salt.

Penang Curry Paste

Penang is a dish often served by the Malay people in southern Thailand. My version of the recipe is one of the all time greats from my restaurant years. The addition of crushed peanuts to this traditional Thai recipe makes this mild paste a winner for those who like flavour without too much heat.

Vindaloo is a dish originating in Goa, and is almost universally featured in Indian restaurant menus. Yellow Curry Paste

Influenced by Indian and Muslim cuisine during the 18th century Thai yellow curry paste is so versatile you'll want to try it with a variety of meat, seafood, noodle and soup recipes. This fragrant yellow curry paste makes Thai food easy to cook. Yellow curry is the mildest of the Thai curries and is perfect for use with fish and vegetable dishes. Butter Chicken Curry Paste

Butter Chicken is probably the most popular Indian dish in the world. It is a favourite dish for those people who do not like their curries hot, or are trying Indian cuisine for the first time. The traditional 2 step cooking process is eliminated with this paste, just add thick yogurt or double cream to the paste, marinate your meat and roast, grill or wet cook.

Pakistani Balti Curry Paste

The traditional Kashmiri Balti curry originates from the Pakistani region of Baltistan. Sometimes called the ‘British Curry’ it has an avid following in the ‘Balti Triangle’ in Birmingham. This is my version which incorporates influences from both recipes as well as a few additions of my own.

Pakistani Jalfrezi Curry Paste

Jalfrezi is a unique and delicious Chinese and Pakistani recipe. It is traditionally served as a stir fry with the addition of vegetables. This versatile paste can also be used as a curry paste with the addition of fresh or tinned tomato. This is my version which incorporates a few additions of my own.

Rogan Gosht Curry Paste

This rich and flavoursome curry is one of the most popular curries to come from the Kashmiri region and has a medium spiciness. There are many different versions of the paste, this is mine. I do not add tomato to this paste. However, tinned tomato can be added to the curry, or diced fresh tomato as a garnish if required.

Sri Lankan Red Curry Paste

This is my version of the traditional Sri-Lankan ‘Rathu Kukul Mas’ meaning ‘Red Chicken’ curry. The addition of fresh ingredients gives it more ‘zing’ and flavour. I have toned down the chilli heat from the original and given the fennel flavours prominence. I think this gives the paste much more versatility. The addition of coconut milk will tone down the heat if required.

Caribbean Curry Paste

This recipe is influenced by the curries of Guadalupe, Martinique, Trinidad, and Jamaica, I have blended the different styles and come up with a paste that I think represents all of them in some small way.  Serve with rice, roti bread, fried bananas and some Bob Marley!

Balinese Curry Paste

This wonderfully fragrant curry is one of my favourites. Apart from making a very ‘moreish’ curry, the paste can be added to soups, stews and stir fries. Add a spoonful of the paste to diced tomato, cucumber, blanched bean shoots and chopped coriander to make a quick and tasty sambal that is a great accompaniment to any meal.

Pete's Laksa Paste

The original Sarawak Laksa recipe is a closely guarded secret known only to a select few inside the state of Sarawak. This is my version of it with a few additions that the families of Kuching may not approve of. Simply stir the paste into a quantity of broth or water, add your meat and or vegetables and finish with coconut cream.

Goan Xacuti Curry Paste

Xacuti (pronounced sha-koo-tee) is a Goan dish dating back several hundred years. Prior to colonisation by the Portuguese this was a vegetarian dish and as such it is still favoured by non meat eaters. It is probably the most complicated of the Indian dishes, requiring several steps to complete. I have worked on this recipe over several years and I am now happy to present it to you. It is perfect with’ gamey’ meats such as rabbit, boar, venison, mutton and goat as well as crabs, prawns, mussels and other firm seafood.
